This recipe is from the Fixate Cookbook. For those of you that don't know what that is, it is a cookbook specifically for the 21 Day Fix program which teaches you not only how to eat clean, but also how to eat the correct portions of each food group so that your body can work correctly! After my first round of 21 Day Fix I was amazed to find out how much better I felt on a clean eating plan.
I slept so much better, I had more energy, I didn't have the stomach issues that I was so used to having and I didn't get heart burn or acid reflux. Not to mention the biggie! I went from having 15-20 migraines a month to maybe 1 or 2. I was so surprised at how much my body had been affected by the un-wholesome foods that I was used to putting in it.
Now, my entire family strives to eat clean (unprocessed, whole foods) the majority of the time. Fixate is a great tool to help us.
When I first got the cookbook, I have to admit, I was hesitant to try any of the recipes. BUT I have tried many many recipes and each time I have been blown away! These recipes are sooooooo good. I have told my husband that sometimes I feel like I could eat some of the recipes every day and be happy.
This turkey chili was so different. It is not your typical Turkey Chili. It has ingredients like red wine and feta cheese in it. It has such an interesting taste and it was a hit with the whole family.
Turkey Chili
Serves: 8 (appoximately, 1 1/2 cups each) Prep Time: 20 minutes Cooking Time: 30 min.
Container Equivalents (per serving): 1/2 1 1 1/2 tsp.
2 tsp. Extra-virgin organic coconut oil, melted
1 medium onion, chopped
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
2 cloves garlic, finely chopped
1 lb. cooked 93% lean ground turkey breast (or lean grass-fed ground beef)
2 cans (15. oz) kidney beans (or pinto beans), drained, rinsed
1 can (15 oz) organic diced tomatoes, no salt added
1 cup red wine
1 TBSP. ground chili powder
1/2 tsp. sea salt (or Himalayan salt)
2 tsp. crushed red pepper (optional)
1/4 cup chopped fresh cilantro
8 tsp. crumbled goat cheese (or feta - I used feta)
1. Cook the ground turkey (I did this ahead of time when I was prepping my meals for the week)
2. Heat oil in a large saucepan over medium-high heat.
3. Add onion and bell peppers; cook, stirring occasionally, for 5-6 minutes, or until onion is translucent.
3. Add garlic; cook, stirring frequently, for 1 minute.
4. Add turkey, beans, tomatoes (with liquid), wine chili powder, salt, and red pepper. Bring to a boil. Reduce heat; gently boil, stirring occasionally, for 20 minutes, or until slightly thickened.
5. Evenly divide between six serving bowls; top with cilantro and cheese.
6. Sprinkle with cheese and cilantro and enjoy
FOR THE CROCKPOT (I usually double this to make it last longer)
1. Brown the ground turkey ( I do this when I prep my meals for the week)
2. Put turkey in the crock pot.
3. Add onions, bell peppers, garlic, beans, tomatoes (with liquid), wine, chili powder, salt and red pepper.
4. Cook on low for 6 hours
5. Divide evenly between 6 bowls.
6. Sprinkle with feta cheese and cilantro and ENJOY
